I’ve always enjoyed cooking. I consider it my stress relief. I love cooking for my family and preparing my daughter’s meals but I miss cooking just for myself.
Today is one of those days that I wanted something for myself. The need to indulge was strong, so I cooked; a very simple dish of grilled chicken and steames potatoes. To marinate the chicken, I grinded the leftover ingredients from my daughter’s chicken stock - spring onion, 1/4onion, garlic, star anise. Mix it with the chicken breast, wrap in foil and chuck it in the oven for 20min. Then I steamed two potatoes. To garnish I used garlic salt and black pepper…voila.. my lunch is ready!
With a tall glass of chilled lemon water and tomato salad as side dish, I was content.
